Sugar Fix

Greeks love sugar. And syrup. And nuts. I am nuts about a greek sweet. I am Greek. Ergo.

What sets Greek desserts apart from Western desserts is their eastern influence. Whereas western desserts are more sponge and cream based, Greek sweets are sugar based. Many include fillo pastry, which is paper thin sheets of pastry, layered upon each other with nuts that grow abundantly in Greek soil: walnuts, pistachios, hazelnuts and almonds. The dessert is baked, then drenched in a sweet aromatic honey syrup. Flavours infuse and syrup helps preserve the masterpiece.

Call them desserts at your peril, for Greeks refer to them as sweets. As a rule, Greeks don’t do dessert, preferring fresh seasonal fruit such as watermelon to round off a meal. Along with Greek coffee and a glass of iced water, the lady of the house will bring out a sweet to tempt the visitor.
